Seafood chowder: United Fisheries

Ingredients

1kg Seafood Marinara Mix
2 onions, diced
2 rashers bacon
2 Tbsp olive oil
4 medium potatoes, peeled and cubed
2 Tsp salt
1/4 Tsp pepper
2 Tsp dried parsley or sage
2 1/2 cups boiling water
3 cups milk
30g butter
1/3 cup flour

Method – Serves 5 – 6

  1. Remove rind from the bacon, chop into pieces and sauté in a large, heated saucepan with half the olive oil.
  2. Add the second half of the oil and the diced onions.
  3. Place the potatoes on top of the bacon and onions.
  4. Next add the Seafood Marinara mix and the boiling water then leave to simmer for 10 minutes or until the potato cubes are cooked.
  5. Make a white sauce using the butter, flour, and milk. (Melt the butter in another saucepan, take off the heat then mix in the flour to form a paste and then gradually add the milk to make a smooth sauce.)
  6. Season the white sauce with salt, pepper, and herbs.
  7. Pour the white sauce into the seafood saucepan and allow it to thicken on the heat.
  8. Serve, accompanied with crusty French bread.
