Yotti’s easy oven-baked poached fish


The secret to a great fish dish is simplicity, so says Yotti Ioannou, co-owner of Theo’s Fisheries, a Christchurch favourite for quality fish.

How does Yotti like his fish? Fresh fish doesn’t need a load of bells and whistles, he says. The most important thing is to buy the best. Here he shares his deliciously foolproof poached fish recipe. “It’s a winner, I’m not a bachelor anymore but when I was single and flatting, I would live on this kind of dish, it was just so super easy.”

INGREDIENTS

  • Quality, fresh fish of your choice. “Fish that are caught on the long line, or using more sustainable fishing methods, give you better quality. That fish is much better looked after, you can get more life out of it. It’s a fresher product and it tastes better,” Yotti says.
  • Premium olive oil
  • Fresh lemon juice
  • Garlic, to taste
  • Parsley and tomatoes (optional)
  • Salt and pepper
  • Bread for serving, to soak up the juices

METHOD

  • In a baking dish, add the fish, followed by the other ingredients.
  • Bake at 200°C for 20 minutes.
  • Serve with new potatoes fried in butter, and fresh greens such as asparagus or broccoli.
