Serves: 2-3 | Prep time: 10 minutes (plus chill time)

Ingredients:

Chia pudding

  • 6 Tbsp Good Puddings Apple Crumble Chia Mix
  • 1 1/3 cups milk of choice (oat or dairy work especially well here)

Stewed apples

  • 2 apples, peeled and diced
  • 1–2 Tbsp water
  • 1/2 tsp cinnamon
  • Optional: 1 tsp maple syrup or brown sugar

To layer

  • Crunchy granola
  • Caramel sauce (store-bought or homemade – to make your own, combine 1 cup granulated sugar and 1/4 cup water in a saucepan, boil without stirring until amber, then remove from heat. Carefully stir in 3/4 cup heavy cream, 4 Tbsp unsalted butter, and 1 tsp vanilla.)

Method:

  1. Make the chia pudding
Add the Good Puddings Apple Crumble Chia Mix and milk to a bowl or jar. Stir well, wait 2 minutes, then stir again. Cover and refrigerate for at least 2 hours or overnight until thick and creamy.
  2. Stew the apples
Add the diced apples, water, and cinnamon to a small saucepan. Cook gently over medium heat for 5 to 8 minutes until soft and jammy. Stir through the sweetener if using, then set aside to cool.
  3. Layer it up
Spoon chia pudding into jars or glasses. Add a layer of stewed apples, a drizzle of caramel sauce, and a sprinkle of granola.
  4. Repeat & finish
Repeat the layers until full, finishing with extra granola and a final drizzle of caramel just before serving.
