White Christmas slice
We’ll all be dreaming of a white Christmas with this mouth-watering festive treat.
INGREDIENTS
- 500g quality white chocolate
- 1 1/2 cups rice bubbles
- 1/2 cup red glacé cherries
- 1/2 cup dried apricots, quartered
- 3/4 cup unsalted shelled pistachio nuts
- 1/4 cup sultanas and/or golden raisins
- 1 cup desiccated coconut
For the topping:
- 1 Tbsp red glacé cherries
- 1 Tbsp pistachios
METHOD
- Line a 20cm tin with baking paper.
- To a large bowl, add the rice bubbles, glacé cherries, dried apricots, pistachio nuts, sultanas, raisins and coconut. Stir well to combine.
- To melt the chocolate, place the pieces in a heatproof bowl set over a pan of barely simmering water. Stir with a metal spoon or spatula until the chocolate has almost melted. Remove from the heat – residual heat will melt the remaining chocolate.
- Add the melted chocolate to the other ingredients and stir well to coat everything evenly in the chocolate.
- Pour into the prepared tin and flatten down with a spatula or metal spoon.
- Sprinkle with the cherries and pistachios and refrigerate for three hours, or until the mixture has set.
- Once set, remove from the fridge, sit for 10 minutes before cutting into 16 squares.
