White Christmas slice

We’ll all be dreaming of a white Christmas with this mouth-watering festive treat.

INGREDIENTS

  • 500g quality white chocolate
  • 1 1/2 cups rice bubbles
  • 1/2 cup red glacé cherries
  • 1/2 cup dried apricots, quartered
  • 3/4 cup unsalted shelled pistachio nuts
  • 1/4 cup sultanas and/or golden raisins
  • 1 cup desiccated coconut

For the topping:

  • 1 Tbsp red glacé cherries
  • 1 Tbsp pistachios

METHOD

  1. Line a 20cm tin with baking paper.
  2. To a large bowl, add the rice bubbles, glacé cherries, dried apricots, pistachio nuts, sultanas, raisins and coconut. Stir well to combine.
  3. To melt the chocolate, place the pieces in a heatproof bowl set over a pan of barely simmering water. Stir with a metal spoon or spatula until the chocolate has almost melted. Remove from the heat – residual heat will melt the remaining chocolate.
  4. Add the melted chocolate to the other ingredients and stir well to coat everything evenly in the chocolate.
  5. Pour into the prepared tin and flatten down with a spatula or metal spoon.
  6. Sprinkle with the cherries and pistachios and refrigerate for three hours, or until the mixture has set.
  7. Once set, remove from the fridge, sit for 10 minutes before cutting into 16 squares.
