The 5-minute feel-good bowl
Ready to nail your health goals in 2026? This superfood salad does the trick.
Local holistic wellness coach and yoga teacher Alex Ballagh shares this salad recipe with a detox dressing. “I give this recipe to most of my private clients because it’s so good. The rocket and lemon support the liver and help digestion; goji berries balance blood sugar; zinc and magnesium in pumpkin seeds for hormone and nervous system support, while the healthy fats and protein keep you satiated.”
INGREDIENTS
- 2–3 big handfuls of rocket leaves
- 1–2 Tbsp goji berries
- 1–2 Tbsp pumpkin seeds
- 1/2 avocado, sliced
- 1/2 cucumber, sliced or ribboned
- Small handful fresh herbs (parsley and mint are magic here)
- 100g halloumi, sliced
- Optional: 1 small chicken breast, cooked and sliced
Detox-support drizzle:
- 1 1/2 Tbsp extra virgin olive oil
- Juice of half a lemon
- 1 tsp apple cider vinegar
- 1/2 tsp grated fresh ginger (or a pinch of dried)
- Pinch sea salt and cracked pepper
METHOD
- Cook the protein: Pan-fry halloumi in a dry pan until golden on both sides. If using chicken, grill or pan-cook.
- Build the base: Add the rocket to a large bowl. Scatter over goji berries, pumpkin seeds, cucumber, avocado and herbs.
- Mix the dressing: Whisk all dressing ingredients in a small bowl until glossy and bright.
- Assemble and enjoy: Top salad with warm halloumi (and chicken if using). Drizzle over dressing.
