Tasty Taramasalata and Heavenly Hummus


Tasty Taramasalata

Ingredients — Serves 8

4 thick slices sourdough bread
100g salted or smoked fish roe
1 clove garlic, crushed
1 Tbsp diced red onion
3 Tbsp lemon juice
250ml olive oil
Pita bread to serve

Method

  1. Soak the sourdough in water, squeeze out excess moisture, and tear into pieces.
  2. Add bread to a food processor, along with the fish roe, garlic, onion and lemon juice.
  3. Process until smooth, and then gradually add in the oil until the mix thickens. Serve with warm pita bread.

Heavenly Hummus

Ingredients — makes 2 cups

3 cups chickpeas (tinned or home-made)
1 clove garlic, finely minced
1/3 cup tahini
Fresh juice of 1 lemon
2 Tsp sea salt
2 Tbsp olive oil
1/2 Tsp ground cumin (optional)
2 ice cubes

Method

  1. Cook tinned chickpeas for 20 minutes to make them extra tender. Puree the chickpeas in a food processor.
  2. In a large bowl, mix the nuts and spice powder together. Add the olive oil and mix through.
  3. While the food processor is running, add 2 ice cubes, tahini, garlic, cumin, salt, and lemon juice. Slowly add the olive oil, and blend for 4-5 minutes until thick.
  4. To adjust thickness, add warm water slowly until desired consistency is reached. Serve with warm pita wedges, smoked fish, and raw vegetable such as carrots and cauliflower.
