
Passionfruit syrup soda
This tangy, tropical passionfruit soda is an ideal thirst quencher and is savoured by the sweet tooth.
As passionfruit falls off the vine and fills supermarket shelves, use it to create an easy syrup. Wonderfully versatile, it may be drizzled on cakes, desserts, and ice cream, or combined with sparkling water. For a slushy twist, blend syrup and soda.
To make the syrup, heat equal parts of passionfruit pulp, sugar, and water over medium heat, around 1 cup of each. Turn the heat to low as soon as the syrup begins to boil, letting it simmer and slowly come together for 5-10 minutes. If you don’t like the seeds, strain once completely cool.
Fill a glass tumbler with ice cubes, and add 2-4 tablespoons of the syrup, or to your desired sweetness. Top with sparkling water, stir, and garnish with lime and mint. Refrigerate the leftover syrup in a jar.
Top tip: a splash of alcohol mixed in will let your syrup keep longer.
