Gravlax with dill dressing on pumpernickel


Ingredients – makes 30

1 egg yolk
1 Tsp wholegrain mustard
1 Tbsp lemon juice
1/2 Tsp sugar
1/2 Tsp salt
3 Tbsp olive oil
185ml vegetable oil
3 Tsp finely chopped dill
150 gm gravlax or smoked salmon
30 small slices pumpernickel

 

METHOD

  1. In a small bowl, whisk together the egg yolk, mustard, lemon juice, sugar, and salt.
  2. Mix the oils together slowly in a jug, and pour into the egg yolk mixture, whisking continuously until all the oil is incorporated, and the dressing thickens.
  3. Fold the chopped dill into the dressing, and set aside.
  4. Divide the gravlax or salmon between the sliced pumpernickel, drizzle each with dressing, season with freshly ground black pepper, and serve.

 

Top Tips

Decorate with chopped dill, finely chopped flat-leaf parsley, mint sprigs,
or black caviar.
