Gravlax with dill dressing on pumpernickel
Ingredients – makes 30
1 egg yolk
1 Tsp wholegrain mustard
1 Tbsp lemon juice
1/2 Tsp sugar
1/2 Tsp salt
3 Tbsp olive oil
185ml vegetable oil
3 Tsp finely chopped dill
150 gm gravlax or smoked salmon
30 small slices pumpernickel
METHOD
- In a small bowl, whisk together the egg yolk, mustard, lemon juice, sugar, and salt.
- Mix the oils together slowly in a jug, and pour into the egg yolk mixture, whisking continuously until all the oil is incorporated, and the dressing thickens.
- Fold the chopped dill into the dressing, and set aside.
- Divide the gravlax or salmon between the sliced pumpernickel, drizzle each with dressing, season with freshly ground black pepper, and serve.
Top Tips
Decorate with chopped dill, finely chopped flat-leaf parsley, mint sprigs,
or black caviar.
