Fruity summer delights

Stone fruit is one of the great joys of summertime.

Peaches, nectarines, plums, apricots; there is no need to mess with the delectable flavours of these beauties, which can be enjoyed fresh all summer.

If you want to create stone fruit magic in the kitchen, the options are deliciously endless. So too are ways to use excess fruit if you have a generous tree that provides more than your household can eat.

Desserts, spreads, jams and salads can all hero the sweet and fruity flavours.

An array of stone fruits will work in sweet treats and desserts. Classic favourites include mixed fruit crumbles, peach tarts and plum cake.  Jams, sauces and spreads are ideal for using up fruit, and also make a lovely homemade gift. Try an apricot jam, plum sauce or a mixed fruit chutney.

For summer evenings around the barbecue, you can’t beat a salad with fresh produce and grilled stone fruit. Adding a beautiful caramelisation, grilling peaches and nectarines will bring vibrance and sweetness to any summer salad. Combine with a sprinkle of feta or goats cheese for a match made in heaven.
