Easy ice cream

Home-made ice cream is a real treat and is so easy to make.

I’m not sure where this recipe originated, but I’ve made it multiple times during the last 30 years, and it works every time. To vary the flavour, simply add fresh or pureed fruit, your favourite sweet sauce (chocolate, passionfruit, peppermint, caramel, vanilla) and blend in before freezing.

Ingredients

3 bowls
4 eggs
1/2 cup sugar (any type)
300ml cream

Method

1 – In the first bowl beat four egg whites until stiff, add 1/4 cup sugar, and beat again until stiff.

2 – In the second bowl beat the four egg yolks and remaining sugar until frothy.

3 – In the third bowl beat the cream until fairly stiff.

4 – Add the contents of bowls 1 and 3 into bowl 2. Fold together with a metal spoon.

5 – Add extra ingredients (fruit etc.) if desired, fold in with metal spoon, and then pour into a two litre ice-cream container.

6 – Freeze approximately six hours before serving.
