There are few things more satisfying than a knife that effortlessly slices what you want to cut, when you want to cut it. Ian Knott tries out the HORL 3 sharpener and finds he can barely put it down.
Without naming brands, it’d be fair to say our home knife set is ‘mid-range’. It’s Japanese steel and we shelled out for the accompanying 3-step sharpener to keep our blades in good order. It does a decent job, even though it carves large burrs off the blades. You can’t sharpen the bread knife as the serrations just made the knife jump through the sharpener.
There has to be a better way that doesn’t involve guesswork or carry the risk of shards of steel in your food. Enter the stylish and ingenious HORL 3 sharpener.

You can watch the videos of the HORL 3, but it’s not until you use it that you realise what a clever thing it is. A strong magnet holds your knife at either a 15 degree (sharper) or 20 degree (more durable) angle. You then simply roll the ‘barrel’ wheel along the blade a few times. Firstly with the diamond-coated sharpening disc and then with the ceramic finishing disc. Turn the knife around and repeat. Then just give the knife a wipe and marvel at its new-found sharpness. Even serrated bread knives follow the same simple process.
Honestly, I don’t think our knives were this sharp the day we bought them. The HORL 3 is so much fun to use that I have to stop myself reaching for it whenever I go to slice something.
