Punjabi cuisine with a Kiwi twist has got taste buds excited across Canterbury.

“From the start, I have loved this food,” says Roshan Rangra, owner of two Indian Springs restaurants in Canterbury.

After 30 years in hospitality and with a passion for North Indian street food, he knows a thing or two about what makes a great restaurant.

“Curry is a speciality. We specialise in what I call ‘Kiwi Punjabi cuisine’ because while it is the most delicious food in the world, the style we cook here is not as spicy hot as what you get in India,” Roshan says. “Our speciality is curry; customer favourites include the classic dishes like chicken tikka masala, vindaloo, and rogan josh.”

Traditionally, Punjabi cuisine features rich, slow-cooked gravies, fresh tandoor-baked breads, and creamy dishes like butter chicken, dal makhani, and sarson da saag.

The first Indian Springs opened in Hanmer Springs. Previously Corianders, where Roshan worked as restaurant manager, he took over in 2022 and rebranded. Last year, the second Indian Springs opened its doors in Tower Junction, Addington.

“Our motto is to greet our customers with a smile and ensure that by the time they leave, they are smiling,” Roshan says.
