Who doesn’t love fudge? It’s a rich, versatile, indulgent treat, perfect for gifting. With Christmas fast approaching, gift this Russian Fudge to your loved ones, or enjoy it for yourself – we won’t tell.

INGREDIENTS

  • 3 1/2 cups white sugar
  • 200g sweetened condensed milk
  • 125g butter
  • 1/2 cup milk
  • 3 Tbsp golden syrup
  • 1/2 tsp salt
  • 2 tsp vanilla essence

METHOD

  1. Grease and line a cake tin with baking paper.
  2. Place all the ingredients except the vanilla into a medium saucepan. Warm over low heat for about 10 to 15 minutes until the sugar has dissolved.
  3. Bring to a gentle boil and cook for about 10-15 minutes, stirring to prevent the mixture from burning, until it reaches the soft ball stage.
  4. Remove from heat and add vanilla.
  5. Cool for 5 minutes, before beating with an electric mixer for around 10 minutes until the fudge is creamy and thick.
  6. Pour into prepared tin and leave to cool, then refrigerate until set. Cut when cold.
  7. Divide into gifting portions and arrange in jars for gifting, then decorate with ribbon and a note.
