Chicken fajitas recipe

Tequila? I don’t even know her! If there’s a cuisine that lends itself to a fun family get-together or an evening of entertaining, think Tex-Mex. These chicken fajitas, followed by the dessert nachos overleaf, make for a memorable yet super easy dinner.

Ingredients
Serves 2 – preparation 15 minutes – cooking 12 minutes

  • 250g chicken breast
  • 1 small onion, peeled and diced
  • 1/2 red capsicum, seeds and core removed, diced
  • 1/2 green capsicum, seeds and core removed, diced
  • 1/2 yellow capsicum, seeds and core removed, diced
  • Olive oil
  • Pinch of ground cumin
  • Pinch of ground turmeric
  • Pinch of paprika
  • Salt and black pepper
  • 300g finely chopped tomatoes
  • 2 large tortillas
  • Lime wedges, to serve

Method

  1. Cut the chicken into small cubes and place in the air fryer basket with the diced onion and peppers. Add a drizzle of olive oil as well as the spices, salt and pepper. Mix well.
  2. Cook for 12 minutes at 200°C, stirring halfway through the cooking time. Stir the chopped tomatoes through the chicken and vegetables, then spoon the mixture into hot tortillas and serve with lime wedges.

TIP: You can serve these fajitas with a tasty homemade guacamole.
