Flourless chocolate cake
With all sorts of dietary requirements being catered for today, it’s good to have a couple of tried and true gluten-free options in your cooking arsenal. This is a rich, moist, flourless chocolate cake that can be served on its own, or layered into special occasion cakes.
Ingredients — serves 6-8
300g dark cooking chocolate
5 eggs
90g brown sugar
1/4 Tsp ground cinnamon
Finely grated zest of 1 orange
2 Tbsp orange liqueur
150ml crème fraiche, whipped
Method
- Preheat the oven top 175degC. Line the bottom of a 23cm cake tin with baking paper.
- Place chocolate in a heatproof bowl, and place over a saucepan of simmering water to melt. Stir so it is smooth, and put to one side.
- Put the eggs, sugar, cinnamon, zest, and liqueur into a stainless bowl, and whisk over a saucepan of simmering water until thick and creamy. Remove from heat.
- Beat with a whisk (or beater) until cold, then add the chocolate while whisking continuously.
- Fold in the crème fraiche.
- Pour mix into baking tin, and leave 10 minutes to settle.
- Fill large roasting pan 3/4 full of hot water, then add cake tin, place in oven and cook 30-40 minutes until set.
- Remove from oven, and water bath, and cool.
To serve
Several can be layered to make a special occasion cake with cream filling, or serve on its own with whipped cream and grated chocolate.
