Flourless chocolate cake


With all sorts of dietary requirements being catered for today, it’s good to have a couple of tried and true gluten-free options in your cooking arsenal. This is a rich, moist, flourless chocolate cake that can be served on its own, or layered into special occasion cakes.

Ingredients — serves 6-8

300g dark cooking chocolate
5 eggs
90g brown sugar
1/4 Tsp ground cinnamon
Finely grated zest of 1 orange
2 Tbsp orange liqueur
150ml crème fraiche, whipped

Method

  1. Preheat the oven top 175degC. Line the bottom of a 23cm cake tin with baking paper.
  2. Place chocolate in a heatproof bowl, and place over a saucepan of simmering water to melt. Stir so it is smooth, and put to one side.
  3. Put the eggs, sugar, cinnamon, zest, and liqueur into a stainless bowl, and whisk over a saucepan of simmering water until thick and creamy. Remove from heat.
  4. Beat with a whisk (or beater) until cold, then add the chocolate while whisking continuously.
  5. Fold in the crème fraiche.
  6. Pour mix into baking tin, and leave 10 minutes to settle.
  7. Fill large roasting pan 3/4 full of hot water, then add cake tin, place in oven and cook 30-40 minutes until set.
  8. Remove from oven, and water bath, and cool.

To serve
Several can be layered to make a special occasion cake with cream filling, or serve on its own with whipped cream and grated chocolate.
