
Watermelon & feta salad with mint
Watermelon and feta are a lovely balance of sweet and salty in a summer salad, with a touch of mint for an extra refreshing taste. Look for heavy watermelons in prime condition, especially the seedless varieties.

INGREDIENTS
- 10 cups cubed watermelon (about 1/2 a large one)
- 2 Tbsp olive oil
- 4 Tbsp fresh lime juice
- 2 Tbsp agave (or maple) syrup
- Pinch of salt
- 1/2 cup fresh mint leaves, chopped
- 1 cup cubed feta
METHOD
- Cube the watermelon and place in a large bowl.
- Drizzle the olive oil, lime juice and agave over the watermelon in the bowl.
- Add a pinch of salt and the finely chopped mint. Toss well to coat the watermelon.
- Just before serving, add the cubed feta and toss well.
- Serve, garnished with more mint if desired.
TOP TIPS
- Add extras such as sliced or whole black olives, slivers of red onion, diced avocado, and strawberries.
