Treats not sweets
Heading into Easter, thoughts turn to chocolate, Easter eggs, foil-wrapped bunnies and the like.
Most of those have a high processed sugar content, however there are ways and means of having treats without them being too sucrose laden. Try making your own bliss balls, using the recipe below, and swapping in/out your favourite fruits. You can even make them egg-shaped instead of circular.
Ingredients
150g almonds
12 pitted dates
30g Goji berries
(or redcurrants)
2 Tbsp cacao or
cocoa powder
40g shredded coconut
2 Tbsp maple syrup
2 Tbsp white or black chia seeds
Method
Makes 9 / Prep Time – About 1 hour
- Process almonds in a food processor until finely chopped.
Add the dates, Goji berries, cacao powder, shredded coconut,
and maple syrup, until smooth and well combined. - Place white or black chia seeds on a plate. Roll 2 tablespoon portions of the mixture into balls, and roll in the chia seeds to coat evenly. Refrigerate for at least an hour to set.
- Store in an airtight container in the fridge for up to 2 weeks.
Tip: Substitute dates with succulent dried apricots, and chia seeds with toasted coconut.
