Strawberry tart recipe
Impress your loved ones with a gorgeous strawberry tart, perfect as a centrepiece dessert for home dining. This delectable treat is crafted from a buttery pastry base and topped with luscious crème pâtissière.
Ingredients
125g softened unsalted butter
85g icing sugar
1 egg
200g plain flour
100g strawberry jam
500g strawberries
2 Tbsp apricot jam
For the crème pâtissière
300ml milk
150ml double cream
1 Tsp vanilla extract
3 egg yolks
60g caster sugar
3 1/2 Tbsp cornflour
50g butter, cubed and softened
Method
Mix butter and sugar until smooth. Add egg and mix, then gradually add flour until dough forms. Use hands to shape and chill for 30 mins.
Roll pastry into 26cm circle and place in 23cm fluted tart tin. Prick base and chill for 30 mins. Bake pastry at 200C for 15 mins with baking parchment, then remove parchment paper and bake for 15-20 mins more until golden and crisp. Cool in tin.
To make the crème pâtissière, warm milk, cream, and vanilla in a pan over a medium heat then whisk yolks, sugar and cornflour. Mix a quarter of cream with egg mix and combine with the rest in the pan. Cook and stir over a low-medium heat for 5-8 mins until thick. Let cool for 15 minutes, then whisk in butter until smooth, cover and chill in fridge. Spread strawberry jam on pastry, pipe crème pâtissière in a spiral pattern, and arrange strawberries. Warm apricot jam, brush over strawberries.
