INGREDIENTS
3 cups whole milk
3 Tbsp cocoa powder
3 Tbsp sugar
1 Tsp ground cinnamon
1 Tsp vanilla extract
Pinch (or 2) of cayenne pepper
100g dark chocolate, chopped
Whipped cream, marshmallows or grated chocolate to serve
METHOD
1. In a medium saucepan, whisk together the milk, cocoa, sugar, cinnamon, vanilla, and cayenne.
2. Place over medium heat occasionally stirring until steaming, about 5 minutes. (Do not boil).
3. Add the chocolate and stir until melted and smooth.
4. Serve topped with whipped cream, marshmallows, or grated chocolate (or all three).
TOP TIPS
Avoid using milk chocolate as it will be too sweet when combined with sugar. Use Mexican chocolate if you can.
