Let us eat lettuce
Breaking out the iconic Kiwi chips and onion dip may still be okay for a backyard barbecue, however like Oliver Twist, many people want more. Not more chips and dip, more options in this instance, and there are plenty to choose from.
You can start with your friendly neighbourhood caterer, have guests bring a plate, or whip up something quick and delicious yourself. Check out these Lettuce Cups, served with sliced steak and different sauces. Use lettuce in lieu of crackers, crostini, or crusty French bread.
Lettuce Cups (makes 20)
INGREDIENTS
- 20 baby lettuce leaves
- 1/2 Tbsp olive oil
- 200g cooked meat (roast beef, shredded chicken, prawns etc)
- Topping such as sprouts, chillies, finely sliced vegetables, chopped nuts, or kimchi.
METHOD
- Wash lettuce leaves, and pat dry; set aside.
- Add meat to each lettuce leaf.
- Build up with your desired toppings
- Add a dash of your favourite sauces.
TOP TIP
Try a variety of sauces, such as peppercorn, salsa verde, lime and chilli, chimichurri, mustard, or blue cheese.
