Instant pick-me-up: Chocolate mug cake

Need instant indulgence? This microwave chocolate mug cake steps in to serve our sugar cravings when we need a quick lift.

INGREDIENTS

  • 1/4 cup flour
  • 1/8 cup sugar
  • 2 Tbsp cocoa powder
  • 1/8 tsp baking powder
  • 3 Tbsp milk
  • 2 Tbsp oil (such as avocado, rice bran or coconut).
  • 1/2 tsp vanilla
  • 1-2 Tbsp water
  • Handful chocolate chips or 1 Tbsp hazelnut spread

METHOD

  • Combine dry ingredients in a large microwave-safe mug.
  • Whisk in wet ingredients until you reach a smooth consistency.
  • Make a hole in the centre of the mug, filling it with either chocolate chips or hazelnut spread. Use the mixture to cover the filling.
  • Microwave for 90 seconds. Depending on your microwave and consistency preference, it may need more or less time.
  • Remove from the microwave and let cool for a few minutes. Dust with icing sugar or a scoop of ice cream.

Top tip: soup mugs are ideal to prevent your cake from overflowing.
