
Instant pick-me-up: Chocolate mug cake
Need instant indulgence? This microwave chocolate mug cake steps in to serve our sugar cravings when we need a quick lift.
INGREDIENTS
- 1/4 cup flour
- 1/8 cup sugar
- 2 Tbsp cocoa powder
- 1/8 tsp baking powder
- 3 Tbsp milk
- 2 Tbsp oil (such as avocado, rice bran or coconut).
- 1/2 tsp vanilla
- 1-2 Tbsp water
- Handful chocolate chips or 1 Tbsp hazelnut spread
METHOD
- Combine dry ingredients in a large microwave-safe mug.
- Whisk in wet ingredients until you reach a smooth consistency.
- Make a hole in the centre of the mug, filling it with either chocolate chips or hazelnut spread. Use the mixture to cover the filling.
- Microwave for 90 seconds. Depending on your microwave and consistency preference, it may need more or less time.
- Remove from the microwave and let cool for a few minutes. Dust with icing sugar or a scoop of ice cream.
Top tip: soup mugs are ideal to prevent your cake from overflowing.
