
Heavenly hors d’oeuvres: Watermelon and feta squares
Tiny, tasty, and oh so tempting, hors d’oeuvres come into their own at all manner of functions. From pre and post-wedding drinkies and nibbles, to setting the scene at a barbecue, these bite-sized morsels are meant to be popped into your mouth whole, and savoured as a prequel to other dining courses. The secret is to keep them small. Here are some suggestions:
WATERMELON AND FETA SQUARES
Ingredients – makes 25
1/2 large seedless watermelon
50 gm feta cheese
1 Tsp sumac
6 black olives, seeded and finely sliced
1 1/2 Tbsp flat-leaf parsley
1 Tsp finely chopped thyme
METHOD
- Cut the watermelon flesh into 2cm cubes.
- Cut the feta into 2cm or smaller cubes.
- Place the sumac, sliced olives, parsley, and thyme into a small bowl, and toss to mix.
- Place a feta square on top of each watermelon cube, and sprinkle with olive and herb mix.
Top tips
For a colourful, tasty alternative, simply decorate each watermelon and feta cube with a mint or basil leaf.
