German potato pancakes


Crispy, golden brown and hearty, these German-style pancakes are great for breakfast, lunch, brunch or even a light dinner. They’re best served hot, with sweet or savoury sauces or toppings.

INGREDIENTS
4 medium potatoes, peeled
2 Tbsp grated onion or chopped chives
2 eggs, beaten
1/2 cup plain flour
1/4 Tsp baking powder (optional)
Pinch of salt
2 Tbsp butter
2 Tbsp olive oil

METHOD
1. Grate potatoes into a bowl.
2. Cover with water, rinse well, drain, and pat dry in a linen tea towel.
3. Add onions/chives, eggs, flour, and salt, and mix together.
4. Heat oil and butter together in a large skillet over medium heat.
5. Drop heaped tablespoons of potato mixture into skillet, and press to flatten and form into patties.
6. Cook until crispy and golden on both side (about 3 minutes).
7. Serve with bacon, bratwurst sausages, or slices of apple cooked in butter.

TOP TIPS
Add grated carrot to the mix
Serve with sour cream and chives
Sauce options include maple syrup and sweet chilli sauce
Liven up with smoked salmon, bacon or breakfast sausages.
