Cowboy caviar

This is footy food at its finest – fresh and crunchy with no cutlery needed. When dad puts his feet up to watch the game, count on cowboy caviar to keep his energy high.

INGREDIENTS

  • 15-20 cherry tomatoes
  • 2 avocados
  • 1 red onion
  • 1 can black beans
  • 2 cups canned corn kernels, or chargrilled off the cob
  • 1 capsicum
  • Jalapeño to your spice preference
  • 1/3 to 1/2 cup chopped coriander
  • 1/3 cup olive oil
  • 3 Tbsp lime juice
  • 2 garlic cloves, minced
  • Pinch of salt and black pepper, to taste
  • Tortilla chips, to serve

METHOD

  1. Dice tomatoes, avocado, onion, capsicum, and jalapeño. Add to a large bowl with beans, corn and coriander. Toss well.
  2. To a separate bowl, add oil, lime juice, garlic, salt and pepper, and whisk to make the dressing.
  3. Mix dressing together with vegetables and serve with corn chips, or refrigerate and toss again before serving.
