
Courgette & feta fritters
Light, fluffy, and fabulously easy – make these fritters as a light dinner or side snack, using up the stash of courgette and spring onion in your fridge.
INGREDIENTS
- 2 medium courgettes, grated
- 2 spring onions, chopped
- 2 eggs
- 3/4 cup feta
- 2 cloves garlic, crushed
- Salt and pepper to taste
- 1 – 1 1/4 cup flour, depending on consistency
- 1 Tsp baking powder
- Butter, for frying
METHOD
- Grate courgettes, before straining as much liquid as possible through a muslin cloth. Add to a large bowl.
- Mix in spring onion, eggs, feta, garlic, and salt and pepper to taste. Just combine, and add flour and baking powder. Mix thoroughly.
- Add butter to a large frypan over medium heat, and spoon the mixture to make fritters the size you prefer, ensuring they are not too thick.
- Flip after a few minutes or when golden brown on one side. Remove when cooked, and keep warm while you make the rest.
- Serve with a garlic herb Greek yoghurt sauce or sour cream and sweet chilli sauce.
