Cocktail with Lammermoor pink gin


Ingredients

  • 3 mls Lammermoor Pink Gin
  • 2 Tbsp lemon juice, freshly squeezed
  • 1 1/2 Tbsp raspberry syrup
  • 1 egg white
  • Fresh or freeze-dried raspberries

Raspberry Syrup

Add 1 cup sugar and 1/2 cup water to a pot. Stir over medium heat until the sugar has dissolved. Reduce heat to low, add 1/2 cup fresh raspberries, and mash into a pulp. Fine-strain the mix into a jar. Refrigerate until ready for use.

Method

  1. Add the Lammermoor gin, lemon juice, raspberry syrup, and egg white into a shaker without ice and shake well for 20 seconds. Add ice to the shaker, and shake again for 20 seconds.
  2. Strain the drink into a chilled cocktail glass, collecting the foam on top.
  3. Garnish with a few fresh raspberries or a sprinkle of crushed freeze-dried raspberries.
