Charred broccolini with parmesan and pine nuts


Take the humble broccoli and cheese sauce side plate up a notch with this quick, easy, and full-of-flavour dish.

Just four main ingredients bring it together. Mouthwatering parmesan cheese and the buttery distinct notes of pine nuts, paired with the sharp aromas of garlic is a delicious combination. Add to that the chargrilled, savoury taste of charred broccolini, and you are serving complete umami. This flavour profile is something else.

Something so simple, that takes little time to prepare and comes with the flavours of dining at a five-star restaurant, is exactly the side dish to have up your sleeve for winter nights and hosting parties.

INGREDIENTS

  • 2-3 bunches broccolini, depending on servings required
  • 4 sliced garlic cloves
  • 1/4 cup pine nuts
  • 1/3 cup grated parmesan
  • 1 Tbsp olive oil

METHOD

  1. Wash and dry the broccolini.
  2. To medium-high heat on a non-stick pan, fry pine nuts until slightly coloured and put aside.
  3. To the same pan, add one tablespoon of olive oil and cook broccolini until tender and charred to your liking.
  4. Push aside the broccolini and add garlic to the pan, cooking until fragrant.
  5. Transfer cooked broccolini and garlic to a serving dish and sprinkle with previously prepared pine nuts and parmesan. Enjoy hot.
