Watermelon & feta salad with mint


Watermelon and feta are a lovely balance of sweet and salty in a summer salad, with a touch of mint for an extra refreshing taste. Look for heavy watermelons in prime condition, especially the seedless varieties.

Prep: 15 minutes    Servings: 10 

INGREDIENTS

  • 10 cups cubed watermelon (about 1/2 a large one)
  • 2 Tbsp olive oil
  • 4 Tbsp fresh lime juice
  • 2 Tbsp agave (or maple) syrup
  • Pinch of salt
  • 1/2 cup fresh mint leaves, chopped
  • 1 cup cubed feta

METHOD

  1. Cube the watermelon and place in a large bowl.
  2. Drizzle the olive oil, lime juice and agave over the watermelon in the bowl.
  3. Add a pinch of salt and the finely chopped mint. Toss well to coat the watermelon.
  4. Just before serving, add the cubed feta and toss well.
  5. Serve, garnished with more mint if desired.

TOP TIPS

  1. Add extras such as sliced or whole black olives, slivers of red onion, diced avocado, and strawberries.
    2. Use a balsamic dressing.
    3. Swap mint for spring onions.
    4. Keep watermelon in fridge before use.
