Heavenly hors d’oeuvres: Watermelon and feta squares


Tiny, tasty, and oh so tempting, hors d’oeuvres come into their own at all manner of functions. From pre and post-wedding drinkies and nibbles, to setting the scene at a barbecue, these bite-sized morsels are meant to be popped into your mouth whole, and savoured as a prequel to other dining courses. The secret is to keep them small. Here are some suggestions:

WATERMELON AND FETA SQUARES

Ingredients – makes 25

1/2 large seedless watermelon
50 gm feta cheese
1 Tsp sumac
6 black olives, seeded and finely sliced
1 1/2 Tbsp flat-leaf parsley
1 Tsp finely chopped thyme

METHOD

  1. Cut the watermelon flesh into 2cm cubes.
  2. Cut the feta into 2cm or smaller cubes.
  3. Place the sumac, sliced olives, parsley, and thyme into a small bowl, and toss to mix.
  4. Place a feta square on top of each watermelon cube, and sprinkle with olive and herb mix.

 

Top tips

For a colourful, tasty alternative, simply decorate each watermelon and feta cube with a mint or basil leaf.
