Salmon side dishes

Inspired to cook a salmon dish? Here are three great ideas for sides.

Salmon in restaurants is almost always served with vegetable side dishes like broccolini, courgettes, or carrots, and a starchy side of rice or roasted potatoes.
All great choices, but for something a little different, try these three sides.

1. Sautéed courgettes and mushrooms
This healthy side dish features caramelised, tender courgettes and mushrooms brightened with a splash of balsamic vinegar.

2. Roasted tomatoes
A quick and easy way to add extra flavour as a delicious side dish for salmon. Fill the base of an oven dish with halved cherry tomatoes, cover with oilve oil, salt and pepper and roast in the oven at 200 degrees celsius for 15 to 20 minutes. Garnish with fresh basil.

3. Green beans almondine
A classic French side dish featuring fresh green beans tossed in warm butter or olive oil, toasted sliced almonds, minced garlic or shallots, and a bright splash of fresh lemon juice and zest. Boil the trimmed beans for 3 to 4 minutes in heavily salted water, sauté the almond slices in butter, and add the garlic and shallots. Finally, using tongs or a slotted spoon, add the beans from the boiling water to the pan. Sauté, toss, season, serve immediately.
