This is a French recipe, from a visiting winemaker in New Zealand for the wine harvest. An aniseed wheel may be substituted for Pernod, to make a non-alcoholic version, and fennel can be replaced with sliced onions. Serve with crusty French bread.
Ingredients
1 Tbsp butter
2 fennel bulbs, cut into slivers
4 cloves garlic, finely diced
1 cup dry white wine
1 cup water
1/2 Tsp celery seeds
1kg (30) mussels in shell, cleaned and de-bearded
2 Tbsp Pernod
1/2 cup cream
2 sprigs fresh tarragon (or 1 Tsp dried)
