New Zealand restaurants upholding authentic Japanese cooking methods,” explains owner Matty Yates. Their tonkotsu broth – one of Japan’s most iconic and richly flavoured ramen styles – has become a symbol of their commitment to the quality and the standards that make up the Tanoshi experience. Chefs cook the broth at a rolling boil for more than 12 hours to get that creamy, full-bodied flavour in every bowl.

Winter warmth extends beyond the hearty bowl – from mulled plum wine (umeshu) to special hot sake. Sweet meets tart with every sip of umeshu, balanced by syrupy, fruity flavours and the sharpness of the ume plum. Mulled, flavours fuse with fragrant spices for a delicious winter warmer.
