Ginger winter tonic

A warming and healthy ginger winter tonic that’s easy to make and works well on cold days.

Ingredients (serves 2)
• 5cm piece fresh ginger, thinly sliced
• 2 cups water
• 1 cinnamon stick (optional, for extra warmth)
• 2-3 whole cloves (optional)
• Juice of half a lemon
• 1-2 tsp honey or maple syrup, to taste (add after heating)
• Pinch of ground turmeric (optional)
• Small pinch of black pepper (optional but recommended if you use turmeric)

Method
1. Add the ginger, water, cinnamon stick, and cloves to a small saucepan.
2. Bring to a gentle boil, then reduce to a simmer for 10–15 minutes.
3. Remove from the heat and strain into mugs.
4. Stir in the lemon juice.
5. Let it cool slightly, then add honey or maple syrup to taste.
6. If using turmeric, whisk it in along with a tiny pinch of black pepper.

Tip: Make a larger batch and refrigerate for up to three days. Reheat gently without boiling and add the lemon juice and honey just before serving for the freshest flavour.
