Fudge, fast & fabulous

Who doesn’t love fudge? It’s a rich, versatile, indulgent treat, perfect for gifting. With Christmas fast approaching, gift this Russian Fudge to your loved ones, or enjoy it for yourself – we won’t tell.
INGREDIENTS
- 3 1/2 cups white sugar
- 200g sweetened condensed milk
- 125g butter
- 1/2 cup milk
- 3 Tbsp golden syrup
- 1/2 tsp salt
- 2 tsp vanilla essence
METHOD
- Grease and line a cake tin with baking paper.
- Place all the ingredients except the vanilla into a medium saucepan. Warm over low heat for about 10 to 15 minutes until the sugar has dissolved.
- Bring to a gentle boil and cook for about 10-15 minutes, stirring to prevent the mixture from burning, until it reaches the soft ball stage.
- Remove from heat and add vanilla.
- Cool for 5 minutes, before beating with an electric mixer for around 10 minutes until the fudge is creamy and thick.
- Pour into prepared tin and leave to cool, then refrigerate until set. Cut when cold.
- Divide into gifting portions and arrange in jars for gifting, then decorate with ribbon and a note.
