Dessert nachos recipe

This is ‘nacho’ your average dessert.
Plot twist! Nachos can be pudding. Drawing inspiration from traditional Mexican treats like buñuelos, Chef Carlos Rodriguez from Christchurch’s Xolo taqueria has created this Proper Dessert Nachos recipe, that transforms sweet cinnamon tortilla chips into a show-stopping finale. Ingredients (serves 4-5)
Toppings
- Mint leaves, fresh
- Vanilla ice cream
- Sweet cinnamon tortilla chips by Proper Crisps
- Syrup
- 100ml water
- 50g sugar
- 1 star anise
- 1 cinnamon stick
Mixed‑berry compote
- 200g mixed berries (fresh or frozen)
- 50g sugar
- 50ml water (optional to reach ideal consistency)
Method
- In a small saucepan, combine water, sugar, star anise, and cinnamon stick.
- Heat gently until sugar dissolves. Strain out all solids and reserve the syrup.
- In a saucepan, combine frozen berries, sugar, and water. Simmer over a medium-low heat, stir occasionally until berries soften and sauce slightly thickens, about 8 to 15 minutes, then remove from the heat.
- Open a bag of Proper Crisps Sweet Cinnamon Tortilla Crisps and put the desired amount (lots!) in a big bowl.
- Spoon over the mixed berry compote and drizzle over some of the reserved syrup. Add 3 scoops of vanilla ice cream. Garnish with fresh mint leaves and edible flowers (optional). Serve immediately and enjoy. Olé!
