Chicken fajitas recipe

Tequila? I don’t even know her! If there’s a cuisine that lends itself to a fun family get-together or an evening of entertaining, think Tex-Mex. These chicken fajitas, followed by the dessert nachos overleaf, make for a memorable yet super easy dinner.
Ingredients
Serves 2 – preparation 15 minutes – cooking 12 minutes
- 250g chicken breast
- 1 small onion, peeled and diced
- 1/2 red capsicum, seeds and core removed, diced
- 1/2 green capsicum, seeds and core removed, diced
- 1/2 yellow capsicum, seeds and core removed, diced
- Olive oil
- Pinch of ground cumin
- Pinch of ground turmeric
- Pinch of paprika
- Salt and black pepper
- 300g finely chopped tomatoes
- 2 large tortillas
- Lime wedges, to serve
Method
- Cut the chicken into small cubes and place in the air fryer basket with the diced onion and peppers. Add a drizzle of olive oil as well as the spices, salt and pepper. Mix well.
- Cook for 12 minutes at 200°C, stirring halfway through the cooking time. Stir the chopped tomatoes through the chicken and vegetables, then spoon the mixture into hot tortillas and serve with lime wedges.
TIP: You can serve these fajitas with a tasty homemade guacamole.
