Biscoff bash

Biscoff seems to be the trend that won’t go away, so foodie and chef Cherie Metcalfe decided she may as well lean into it. This Biscoff mousse recipe from her latest cookbook Seasoned invites all the party energy in glassware to suit the season.
INGREDIENTS
- 315g white chocolate
- 5 egg yolks
- 100g Biscoff spread
- 60g strong black coffee
- 300ml cream
- Lotus biscuits, to decorate
METHOD
- Melt the white chocolate.
- Whip the egg yolks and Biscoff together until light and fluffy (you should be able to see ribbons that slowly dissolve away). Then add the coffee.
- Whip the cream to stiff peaks.
- Stir the egg yolk mixture through the chocolate and then fold through the whipped cream lightly until it is a consistent colour.
- Set in glasses or small bowls, and top with crumbled Lotus biscuits.
